Every Thanksgiving its the same old story….green beans or brussels sprouts? Every year, its the same old outcome. No surprise, I guess. In 2002 brussels sprouts were voted the most hated veg in Britain…..no help due their strong smell when boiled (caused by sulphur compounds). However, swap your mom’s boiled mushy sprouts for a smokey sprout hash and I know you will be pleasantly surprised.

Brussels Sprouts with Onion and Bacon
Ingredients
- 1/2 pound lean bacon, finely diced
- 1 medium yellow onion, diced
- 2 garlic cloves, minced
- 2 pounds brussels sprouts, quartered
- 1 cup chicken broth
- 1 tablespoon of white wine vinegar
- 4 tablespoons butter
- 1 tablespoon chopped tarragon
Directions
In a heavy bottomed pot over medium heat, fry bacon until crisp. Remove bacon and drain on paper towels
Saute the onion and garlic in bacon fat over low heat until soft, about 5 minutes. Add the sprouts and stir them until they start to carmelize, about 10 minutes.
Add vinegar, broth, butter and bacon bits.. simmer for 5-10 minutes. season with salt and pepper. garnish with tarragon
